WOW! I eat so much Mexican food - especially Quesadilla all homemade but never with seafood. I am always looking for new recipes. Funnily enough I was talking to my friend who used to live in the States (I am in Australia) and he told me about all the fabulous Mexican food and then I asked about Fish Tacos which he doesn't like but I have always wanted to try it out. I live in the tropics and there is so much FISH here. Tilapia is considered a pest fish here in Aus and I don't think we really eat it much, but like I said fishing is huge where I live so I may try this recipe with Barramundi or some other salt water fish - or even try Tilapia. I will be sure to try this recipe out :D Thanks for sharing
